Veggie Sticks & Homemade Hummus (VG)

Serves 4-6

Ingredients

1 can (400g / ~14 oz) chickpeas, drained and rinsed

3 tbsp tahini

2 tbsp extra virgin olive oil

2 tbsp fresh lemon juice (about 1/2 lemon)

1 garlic clove, minced

2–4 tbsp cold water (adjust for texture)

1/2 tsp ground cumin (optional)

Salt to taste

Paprika or olive oil for garnish (optional)



Method

Hummus:

Blend chickpeas: Add chickpeas to a food processor and blend for 30 seconds.

Add other ingredients: Add tahini, olive oil, lemon juice, garlic, cumin (if using), and a pinch of salt.

Blend until smooth: Blend again, adding cold water 1 tbsp at a time to reach your desired creamy texture.

Taste and adjust: Add more lemon, salt, or garlic to taste.

Serve: Spoon into a bowl and drizzle with a bit of olive oil or sprinkle with paprika.

Slice veggies into sticks (cucumber/carrots/red pepper/celery) 

Serve with hummus for dipping.
