Avocado Toast with Egg (vegetarian)

Ingredients
- 1 Slice of Bread (Wholewheat, Sourdough or Rye ideally)
- ½ ripe avocado
- 1 egg (of your choice)
- Salt & Pepper to Taste
- Sprinkle of Pumpkin Seeds (optional)
- Drizzle of olive oil (optional)
Method
- Toast the bread until golden brown
- Mash the avocado with a fork and spread over toast
- Cook the egg to your preference (poached or boiled)
- Season with salt, pepper and drizzle of olive oil
- Top with pumpkin seeds
