Ingredients
- 1 Slice of bread (wholewheat, sourdough or rye ideally)
- ½ ripe avocado
- 1 egg (of your choice)
- Salt & epper to aste
- Sprinkle of pumpkin seeds (optional)
- Drizzle of olive oil (optional)
Method
- Toast the bread until golden brown
- Mash the avocado with a fork and spread over the toast
- Cook the egg to your preference (poached or boiled)
- Season with salt, pepper and a drizzle of olive oil
- Top with pumpkin seeds
