Avocado Toast with Egg (vegetarian)

Ingredients

  • 1 Slice of Bread (Wholewheat, Sourdough or Rye ideally)
  • ½ ripe avocado
  • 1 egg (of your choice)
  • Salt & Pepper to Taste
  • Sprinkle of Pumpkin Seeds (optional)
  • Drizzle of olive oil (optional)

Method

  1. Toast the bread until golden brown
  2. Mash the avocado with a fork and spread over toast
  3. Cook the egg to your preference (poached or boiled)
  4. Season with salt, pepper and drizzle of olive oil
  5. Top with pumpkin seeds
