Avocado Toast with Egg (V)

Ingredients

  • 1 Slice of bread (wholewheat, sourdough or rye ideally)
  • ½ ripe avocado
  • 1 egg (of your choice)
  • Salt & epper to aste
  • Sprinkle of pumpkin seeds (optional)
  • Drizzle of olive oil (optional)

Method

  1. Toast the bread until golden brown
  2. Mash the avocado with a fork and spread over the toast
  3. Cook the egg to your preference (poached or boiled)
  4. Season with salt, pepper and a drizzle of olive oil
  5. Top with pumpkin seeds
