Roasted Vegetables & Halloumi Traybake

Ingredients

  • 1 red onion, sliced
  • 1 courgette, chopped
  • 1 red pepper, chopped
  • 200g halloumi, sliced
  • 1 tbsp olive oil
  • 1 tsp oregano
  • Salt & pepper
  • Optional: drizzle of balsamic or squeeze of lemon

Method

  1. Preheat oven to 200°C.
  2. Toss chopped veg in olive oil, oregano, salt & pepper.
  3. Roast for 20 mins, then add halloumi on top. Roast 10–15 more mins.
  4. Finish with lemon juice or balsamic before serving.
