Tuna Pasta

Serves 2

Ingredients

1 tin tuna in spring water (drained) 

1 red onion 

2 garlic cloves, minced 

1 red pepper, diced 

180g sweet cherry tomatoes, halved 

1 tbsp tomato puree 

1 tbsp capers 

280g passata 

150g dry pasta 

1 tsp balsamic vinegar 

fresh basil to top

50g feta to sprinkle on top 


Method

1. Heat olive oil in a saute pan 

2. Add onion and cook over medium heat for 5-7 mins until soft 

3. Stir in garlic, cook for another minute

4. Add red pepper, tomatoes & capers, cook for 5 mins until tomatoes soften 

5. Stir in tomato puree, cook for 1 minute

6. Pour in the passata, add drained tuna and balsamic vinegar 

7. Season well and let the sauce simmer for 10-15 mins until thickened. 

8. Add fresh basil & sprinkle feta on top before serving
