Breakfast Burrito (VG)

Ingredients

  •  1 large wholewheat tortilla
  • ½ cup firm tofu, crumbled
  • ¼ cup black beans
  • ¼ avocado, sliced
  • ½ cup sauteed veggies (bell peppers, spinach, mushrooms)
  • 1 tbsp nutritional yeast (for a cheesy flavour)
  • ½ tsp turmeric
  • ½ tsp garlic powder
  • salt & pepper to taste
  • salsa or hot sauce

Method

1. Heat a pan with a little oil and saute the crumbled tofu for 2-3 minutes

2. Add turmeric, garlic powder, salt and pepper, stir well

3. Warm the tortilla and spread black and sauteed tofu

4. Add avocado slices and sauteed veggies

5. Sprinkle nutritional yeast for a cheesy flavour

6. Roll the burrito tightly and serve with salsa or hot sauce
