Ingredients

  • 250g lean turkey mince
  • 1 medium sweet potato, diced
  • 1 red bell pepper, chopped
  • 1 handful spinach
  • 1/2 tsp paprika
  • 1/4 tsp cumin
  • Salt & pepper
  • 1 tbsp olive oil

Method

  1. Cook sweet potato in olive oil until soft (10 mins).
  2. Add turkey and cook through.
  3. Add pepper, spinach, spices. Cook 5 more mins.
  4. Stir together and serve warm.
  5. (Optional) Top with cheese
