Creamy White Bean & Turkey Soup

Ingredients

1 tbsp olive oil

1 lb turkey (organic ideally)

1 onion, chopped

3 garlic cloves, minced

2 cans white beans (drained)

4 cups of chicken/turkey broth

1/2 cup plain greek yoghurt or light cream (for creaminess)

2 cups chopped spinach or kale

1/2 tsp thyme + pinch red pepper flakes


Method

1. Cook turkey until browned 

2. Add onion and garlic; saute until soft

3. Add beans and broth; simmer for 15 minutes

4. Stir in yoghurt/cream and greens until heated through
