Homemade Granola (VG)

Serves 4

Ingredients

- 2 cups rolled oats

- ½ cup nuts (almonds, walnuts, or pecans) chopped

- ¼ cup seeds (chia, flax or pumpkin)

- ½ cup coconut flakes

- ¼ cup honey or maple syrup

- 2 tbsp coconut oil or olive oil

- 1 tsp vanilla extract

- ½ tsp cinnamon

- ¼ tsp salt

- ½ cup dried fruit (raisins, cranberries or chopped dates)

Method

1. Preheat oven to 325F (160C) and line baking sheet with parchment paper

2. Mix dry ingredients: In a large bowl combine oats, nuts, seeds, coconut flakes,

cinnamon and salt

3. Prepare wet mixture: In a small saucepan warm the honey (or maple syrup) with

coconut oil until melted. Remove from heat and stir in vanilla extract

4. Combine: Pour the wet mixture over the dry ingredients and mix well to coat

everything evenly

5. Bake: Spread the mixture evenly on the baking sheet and bake for 20-25 minutes,

stirring halfway through, until golden brown

6. Cool & Add Fruit: Let granola cool completely then mix in the dried fruit

7. Store in an airFght container for up to two weeks

Serving Ideas:

- Enjoy over yoghurt and fresh fruit

- Sprinkle on smoothie bowls

- Eat as a snack on its own!
