Homemade Granola (VG)

Ingredients

  • 2 cups rolled oats
  • ½ cup nuts (almonds, walnuts, or pecans) chopped
  • ¼ cup seeds (chia, flax or pumpkin)
  • ½ cup coconut flakes
  • ¼ cup honey or maple syrup
  • 2 tbsp coconut oil or olive oil
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup dried fruit (raisins, cranberries or chopped dates)

Method

1. Preheat oven to 325F (160C) and line baking sheet with parchment paper

2. Mix dry ingredients: In a large bowl combine oats, nuts, seeds, coconut flakes, cinnamon and salt

3. Prepare wet mixture: In a small saucepan warm the honey (or maple syrup) with coconut oil until melted. Remove from heat and stir in vanilla extract

4. Combine: Pour the wet mixture over the dry ingredients and mix well to coat everything evenly

5. Bake: Spread the mixture evenly on the baking sheet and bake for 20-25 minutes, stirring halfway through, until golden brown

6. Cool & add fruit: Let the granola cool completely then mix in the dried fruit

7. Store in an airtight container for up to two weeks


Serving ideas:

  • Enjoy over yoghurt and fresh fruit
  • Sprinkle on smoothie bowls
  • Eat as a snack on its own!
