DAY 12 - Gingerbread Cranberry Oat Bars

A cosy, lightly spiced festive bar that’s energising, satisfying, and perfect for Balletmas season.

These bars bring together warm gingerbread spices, chewy oats, and tart cranberries for a delicious seasonal snack. They’re soft, naturally sweetened, and packed with slow-release energy — ideal before class, after training, or as a holiday treat that still supports your body.

Details

Ingredients (makes 8–10 bars):

2 cups rolled oats

1 cup almond flour (or ground almonds)

½ cup dried cranberries

¼ cup coconut oil, melted

½ cup almond butter or cashew butter

⅓ cup maple syrup or honey

1 tsp vanilla extract

1½ tsp ground ginger

1 tsp cinnamon

¼ tsp nutmeg

Pinch of salt

Optional: drizzle of dark chocolate for topping


Method:

Preheat your oven to 170°C (340°F) and line a small baking tin with parchment.

In a large bowl, combine the oats, almond flour, cranberries, spices, and salt.

In a separate bowl, whisk together the coconut oil, almond butter, maple syrup, and vanilla until smooth.

Pour the wet mixture into the dry ingredients and stir until everything is evenly coated.

Press the mixture firmly into the lined tin, smoothing the top with a spatula.

Bake for 18–22 minutes, or until lightly golden at the edges.

Allow to cool completely before slicing into bars.

Optional: drizzle with melted dark chocolate for a more indulgent festive finish.
